The “Everyone Wants this Recipe” Simple Bruschetta
So I have an appetizer that I bring to parties that has been dubbed the “everyone wants this recipe” simple bruschetta. Literally, every time I bring it to a party, people want to know how I made it.
I recently took this to a favorite things party and it reminded me that it is always a favorite whenever I take it to a get together, so I thought I would share it here!
The hardest part about making this bruschetta is chopping the tomatoes. Ha!
The secret lies in this little packet of Italian Dressing.
So to make the bruschetta, just mix up one of the packages according to the instructions. I do the lower fat version and use 1/2 oil and 1/2 water to make it better for you. I chop up around 10 roma tomatoes and then combine it all in one container. Then I add about 1/4 – 1/2 cup of freshly grated parmesan (or even not freshly grated – whatever you have on hand will work). Mix it all together. If you like basil, add it. If not, you don’t miss it. I am on the fence about it (and I didn’t have any on hand), so I didn’t add it to this version.
To take it next level, add a balsamic glaze on top. (I like this one.) Yum!
You can eat right away, but to really have the flavors meld together, make it earlier in the day and leave in the fridge a few hours before serving.
