Easy Appetizer: Spinach Artichoke Cups
For years I have been making spinach artichoke cups as an easy appetizer for showers and dinners. The whole recipe from start to finish (even including cooking) takes about 15 minutes.
All you need to do is get pre-made spinach artichoke dip (Sam’s Club has a really good one) and spoon it into Athens Mini Filo Shells. You can get them at Walmart in packs of 15. I usually buy 3-4 boxes of the Filo Shells and it usually evens out with the dip. I just bake according to the Filo instructions, which I think is about 10-12 minutes on 350.
I had actually forgotten about this “recipe” until my mom served them on Christmas, but have made them at almost every baby and wedding shower I have hosted because they are so easy and such a big hit and would be great for a New Years Eve gathering!
